Kyocera Ceramic Knives

Kyocera ceramic knives are extremely hard (8.2 on the Mohs
hardness scale, vs. steel at 5-6 Mohs, and diamond at 10 Mohs), wear
resistant, and chemically inert.
The base material, zirconium oxide, was originally developed in industrial
applications where hardness, wear resistance and non-reactivity are
necessary, and metal components don't quite reach such standards.
The knives are made by bonding the minute zirconium particles with heat in a
process called sintering. Compared to other ceramic knives, Kyocera's are
made with submicron size powder, whose density is higher, resulting in a
harder blade.
The exceptional hardness of the blade makes the edge superbly sharp.
Normal use is for straight cuts; unlike the less-sharp, softer steel knives,
they do not bend.
These chemically inert blades provide a viable alternative for use by
people with certain allergies to alloys in metal knives. Great for boaters,
and seaside homes, as they do not rust.
Under normal household circumstances, your Kyocera may take 3-5 years or
more before it needs sharpening. It won't stain, and it is guaranteed for
5 years.
With the possible exception of the tip, your ceramic knife will not
break or shatter if dropped. And most damaged tips can be repaired under
the 5-year warranty.

Q. What are ceramic knives generally used for?
A. These knives are perfect for general applications requiring superior edge
retention or wear resistance. They are also ideal for special applications
requiring chemically inert, non-magnetic, non-conductive, or
non-contaminating materials.
Q. Will a ceramic knife break or shatter if I drop
it?
A. No, with the possible exception of the tip. Made with ceramic powder that
is baked at extremely high temperatures, it is much denser than regular
ceramics, and will withstand a lot more pressure. Like a forged metal knife,
if the knife lands on the tip, the tip will break. Fortunately, Kyocera will
re-tip the knife free of charge if it does not show signs of abuse, as would
usually be evident with prying. Also, if the edge is abused, as with
chopping bone or other hard items, this and all other knives will nick.
Q. Can I chop or pry with these ceramic knives?
A. Your knife will work best as a slicing knife. When chopping with the Chef
Knives, use the point as a pivot, always keeping part of the blade on the
chopping surface. Avoid chopping as you might do with a cleaver. And, as
with all knives, avoid prying.
Q. What cutting surfaces work best?
A. As with all knives, wood or polyethylene cutting boards are the best
cutting surfaces. They will keep your knife sharper longer. Avoid marble,
glass, stone, ceramic and other hard surfaces; they damage all knives.
Q. How do I clean my ceramic knives?
A. Clean with water and liquid dish detergent. A mild cleanser (like
Barkeepers Friend) will remove any discoloration not removed by normal
washing.
Q. Can I clean my Kyocera knives in the dishwasher?
A. We do not recommend cleaning them in a dishwasher. Violent motion against
other objects, especially hard plates, could chip the objects and also the
knife itself. Dishwashers ruin wood objects, and the Kyocera knives we offer
have beautiful wood handles that will last a lifetime with proper care. And
because the knives are so sharp, it could be dangerous if someone carelessly
reaches in the dishwasher without noticing the knife.
Q. How do I store my ceramic knives?
A. The box they come in provide safe storage. You can also store them in a
knife block, or plastic sheaths if you choose to store them in a drawer.
Q. Do Kyocera knives come with a warranty?
A. All Kyocera ceramic knives are warranted to be free from defects in
material or workmanship for five (5) years after the original purchase date.
In the event such a defect occurs, Kyocera Tycom Corp. ("KTC") will repair
or replace the knife free of charge. This warranty extends only to the
knife's original purchaser. This warranty does not cover damage caused by
improper use of the knife, or accidental damage to the knife. Small chips or
broken tips are not covered by this warranty, but can often be corrected by
re-sharpening. Discoloration can be removed by soaking the knife in a mild
bleach solution or acetone.
To process your warranty claim please fill out the Warranty form that came
with your knife, enclose your proof of purchase and your knife, and send to
Kyocera Tycom Corp., 17862 Fitch, Irvine, California 92614, Attention:
Warranty Claim. KTC will repair or replace the knife as its sole option.

Q. What things should I avoid to keep the
knife under warranty?
A. Here's a short list of what to avoid...
- Cutting frozen foods, bones, hard cheeses or hard crusts of bread;
- Dropping on hard surfaces;
- Prying with the tip;
- Washing in the dishwasher;
- Using as a scraper;
- Hitting against china or flatware;
- Putting the blade in open flame;
- Sharpening with a conventional sharpener.
Q. How do I sharpen ceramic knives?
A.
Ceramic knives can only be sharpened with special diamond discs. There is
a special battery-operated sharpener (see Sharpeners) which can be used on
ceramic knives that are beveled on both sides. Or use one of the services
