Whipped Cream
There's a really noticeable and most wonderful difference in the taste of
freshly made hot or cold whipped creams, when compared to prepackaged products. Here
are some tips.
Use cream and any other soluble
ingredients you desire. Avoid all grainy or solid ingredients, and finely strain the rest. Some siphons will give you more leeway in the way of ingredients.
To sweeten, use confectioners sugar
or liquid sweetener. Do not use granulated sugar.
Fill bottle only to about 3/4 full,
place the rubber seal in the opening and screw on the dispenser head. Attach
the decorating nozzle.
Place the Nitrous Oxide cartridge in
the holder and screw the holder into the filler valve. A hiss lets you know
that the gas has been released from the cartridge into the can. Then remove
the holder and cartridge. (Warning: Most siphons take only 1 cartridge. For your safety, read the siphon instructions before using.)
Vigorously shake the dispenser
several times vertically. Shake up to 10 times if using well-chilled
sterilized or light cream. (Note: Too much shaking will make it too stiff to
come out of the bottle.)
To dispense, hold the dispenser
vertically, with the nozzle facing downwards, about 1/4" above the object to
be decorated, and squeeze the lever with your index finger.
The decorating nozzle should be
removed and washed with hot, sudsy water right after use. (It prevents ingredients from drying inside the nozzle.)
Store a filled, or partially filled,
dispenser in the refrigerator. It keeps well for several days. Shake the
dispenser vertically before using it again, to mix the gas and cream mixture
thoroughly.
Before opening a spent, or partially
spent, dispenser, press the lever until all the gas has escaped.
Dismantle and clean thoroughly with
sudsy hot water, rinse, and allow to air dry. Store dismantled. |

Misuse of Nitrous Oxide
can lead to tragic physical consequences.
|
Potential problems with nitrous oxide result from careless use. Probably
the biggest risk involves inhaling the gas straight from pressurized tanks
or mask attachments.
In one of many similar studies, researchers at the Medical College
of Virginia found that ingestion of nitrous oxide poses potentially
serious risks to unwitting users, including:
- Brain injury and suffocation from the diminished intake of oxygen,
caused by the temporary loss of motor control.
- Frozen lips and throat, with unreversable damage, from
the very cold temperatures of the gas.
- Ruptured blood vessels in the lungs that force
air into the chest cavity and cause the lungs to collapse, from the
high levels of gas pressure.
- Nausea, vomiting, disorientation, and a temporary loss of motor
control.
