Remove plug to filter

The resulting taste
is that of a strong but smooth coffee, without sharp edges. You may not
need to add as much sugar or cream to tone down the taste.
TEA: Add ½ pound of
your favorite tea leaves to the top container. Fill with cold water 1"
from the top. Let set for 12 hours and then allow to strain into carafe.
Store concentrate in the refrigerator. To make a glass of iced tea, add
2 ounces of tea concentrate to 14 ounces of water. Adjust the strength
to fit your taste. |

How to Use the "Napoletana"
 The Neapolitan Drip Method -
Drip coffee and barley maker (orziera)
Remove the small cover
(not shown).
Lift off the top
container (with spout).
Lift out the filter group
(A+B).
Unscrew the filter cover
(A).
Fill the top of the
filter (B) with finely ground coffee; do not tamp it down.
Screw on the filter cover
(A) onto the filled filter (B).
Fill the container
(without spout) with water, up to the small vent hole (C).
Reinsert the filter group
(A+B) into the water-filled container (without spout).
Replace the top container
(with spout upside down).
 Place the
Napoletana on your stovetop.
Center the unit over the
heat source so that both the handles and spout are not directly over an open
flame or hot elements; use low heat, or a heat diffuser if necessary, or
keep the unit to the side of the burner.
When steam exits the
small hole (C), the water is boiling.
As the water boils,
remove the unit from the stove.
Hold both handles
securely and turn the entire unit upside down, so the container with the
spout is now at the bottom.
Wait 2 to 3 minutes for
the coffee to brew and to completely stop dripping.
At the sink, remove the
top container (without the spout) and the filter group (A+B), then place the
small cover (not shown) over the container with the spout to serve.
The filter (B) has a
notch, or bend, on its side to facilitate removal.
Notes:
- The filter (B) usually has what looks like a small dent along its side.
This is to make it easier to insert and remove from the container, and
allows for overflow to reach the bottom, not your counter or stove.
- Coffee must be ground finely for a good cup, but NOT as fine as is
normally used for espresso, or the water will not filter through it. |
