Pan grilling is great, especially if you have a small kitchen, or
you don't have an exhaust system to accommodate open flame grilling.
- Preheat oven to 500°F.
- Heat pan on stove for 5 minutes.
- Sprinkle pan with salt.
- Pan is ready to use when smoke begins to rise from it.
- Place meat on pan.
- Place on the bottom rack in your oven.
- Flip meat halfway through cooking.
If you need to grill with a lot of heat, then there's nothing that
compares to the cast iron grill pan. It takes a while to heat up, but it can
get red hot without incurring any damage.

If you prefer non-stick, brush some oil on the non-stick surface
to keep foodstuffs from caking over time.
For ease in cleaning, you may wish to choose the non-stick grill
pans. Wear rubber gloves, use very hot water and a soapy nylon scourer to
get all the food off when cleaning (the non-stick finish will last longer).
Clean exterior surfaces as soon as possible, to avoid caking on of cooked
oils. |
