The KAI Shun Classic line of cutlery features the look and
benefits of Damascus steel, yet without its rusting problems.
The
Damascus-look blade profile reduces sticking and results in less damage to
the food being cut and faster prep times.
VG-10 "super steel" is composed of carbon, chromium, cobalt,
manganese, molybdenum, silicon, and vanadium. It is clad with 16 layers of
SU5410 high-carbon stainless steel on each side, producing a 33-layered,
rust-free Damascus look.

Shape PakkaWood® handle provides strength, stability, and moisture
resistance, so the knife is steadier in your hand. It is manufactured by
impregnating hardwood veneers with phenolic, thermosetting resins and fusing
them into a solid, wood-grained structure for premium applications.

Holding Shun Knives Properly
A Professional Grip Makes Cutting Easier
Here's the right way to get a grip on your Kershaw chef's knife.

Hold the knife so that the back of the blade is gripped firmly between your
thumb and index finger. The rest of your fingers wrap lightly around the
handle and are cradled in the palm.
This grip puts the control of the knife directly over its balance
point, giving you greater safety and cutting ease. The knife becomes an
extension of your arm and hand, and repetitive jobs like chopping and mincing
become much less tiring.

Keeping Kershaw Knives Sharp
How to Use Your Sharpening Steel

It's easy to keep your Kershaw cutlery sharp with a steel.
1) Place the tip of the steel firmly against the kitchen counter with the
handle up.
2) Place the knife against the top of the steel at about a 20° angle.
3) Starting with the base of the blade and maintaining that angle, pull the
knife down and across the steel in a slight arc. Maintain very light
pressure.
4) Repeat this on the other side of the blade.
5) Then alternate sharpening both sides of the blade another 6 or 7 times.

The manufacturer guarantees these products for the lifetime of the
original owner. It warrants its products to be free of defects in
materials, construction and workmanship. Upon receipt of any product deemed
by the purchaser to be defective, accompanied by a copy of the original
proof of purchase, KAI will repair or replace, at its option, any
products it finds defective.
Kershaw Knives was founded in Portland, Oregon, by Pete Kershaw in 1974. In
1977 it became a wholly owned subsidiary of the KAI Corporation.

KAI Corporation, a subsidiary of Tokyo based KAI Group (Kai Industries Co., Ltd.), has been
Japan's premier blade producer for more than 90 years. KAI factories are
located in Seki City (Gifu Prefecture), Japan's famous center for cutlery
and other bladed tools (comparable to Solingen in Germany). Blade smiths
there have been producing fine cutlery for more than 700 years. Many of the
descendants of those smiths continue their tradition of excellence at KAI.
KAI Industries also has joint ventures and/or production agreements with
companies such as WMF, Henkel, Unilever, and P&G, primarily in China, where
it manufactures some of its goods. Its U.S. factory primarily produces
pocket knives. |
