Using pastry bags:
· If you are fitting a bag with decorating tubes, start by
cutting off about ¼" off
the tip.
· Put decorating tube into bag so that the small opening of the tube
is exposed. Cut the tip opening a bit larger if necessary.
· Before filling, fold outward about 1" of the wide opening of
the bag, to form a cuff.
· Use a spatula to fill about ¾ of the bag, keeping out air
pockets.
· Unfold the cuff, and twist the top to close the opening.
· Hold the twisted part snugly between your thumb and
index finger, and
apply pressure with your entire hand to start moving the contents through
the tip until you get an even flow.
· Guide the tip with your other hand.
· Twist the top to tighten bag as you squeeze out the ingredients.
· Small and disposable bags work best for detail work.
· Large bags are great for piping mashed potatoes and similarly textured
foods. For added visual impact, use a large star tube.
· To clean, hand wash in warm soapy water. Air dry. |
