Steam puddings are usually made on top of the stove, on a rack above
boiling water. It can take a few hours, but you can cut that time in half by
using it in a pressure cooker.
These molds make a festive dessert. The central tube, by the way, guides
more heat to the center of the pudding, and helps it cook more quickly.
