Cookie Sheets are flat, for easy removal of cookies. One side usually has an upturned lip, for ease in picking it up. It also gives the flat sheet more stability.
Sheet pans, or Jelly Roll pans, are baking sheets with sides that are about 1 in. high. They can be used for cookies, cakes, and other baking tasks.
