Spatulas

High-heat spatulas work very well during cooking. Keep in mind, though, that the lip of the pan, and the heat emanating from underneath, are likely to be higher in temperature than any flexible spatula can withstand; so use it to stir, scrape, etc., but keep it away from the heat in between stirring and scraping.

Some call them flippers or spatulas and some call them turners.

Flexible turners are great for use for cooking. They can easily scrape food from surfaces, and are wonderful for turning lightweight foodstuffs.

Even though many non-stick pans indicate that it's ok to use metal utensils, we recommend nylon and wood turners for longer life. If you must use metal, use the very flexible turners.

Stiff metal turners are generally used for heavy duty scraping and/or for serving.
