Chitarra
Pasta made with a Chitarra is very light, it cooks very
quickly, and absorbs more sauce, and has some conveniences over mechanically
cut pasta.
♦ Flour it generously and the strands won't stick.
♦ Use the board to transfer the cut pasta directly to the boiling water.
♦ Or dry or freeze the pasta for future use.
♦ A mechanical pasta makers is handy for rolling the dough into a width that
will neatly fit over the Chitarra strings.
♦ Cut a
rolled sheet of pasta dough to fit over the wires.
♦ Generously sprinkle flour on both sides of
the sheet.
♦ Place the sheet over the metal wires.
♦ Roll a rolling pin over it with
light-to-moderate pressure.
♦ Slide out the board, and slide the pasta
right into the boiling water.
♦ The pasta will cook faster, and absorb more sauce, than
pasta made any other way.

· It is an egg pasta, which thin sheets are cut into 2-3" squares.
· Smaller, thinner squares make for lighter garganelli.
· The squares are placed on the comb, and the small stick is used to roll
them into a tubular shape.
· Start at one corner of the square, wrapping it around the stick as you
roll it across the comb with light pressure.
· This seals it into a tube and gives the pasta its distinctive knurled,

- Flour the rollers well.
- Roll dough about 3/8" thick and flour well.
- Cut 1/2" to 3/4" wide. Insert one end of strip into wooden rollers and

less the sticking.
- Cook right away or refrigerate or freeze.
- Never immerse in water; just brush off the excess flour and store.
